Have You ever tried Cap 1 Hard Mode in the Castlevania: Portrait of Ruin? In that mode You can never have level higher than 1 (so basically Your character cannot gain any experience points and level up). And Your character dies if he is hit by an enemy's attack.

I'm not sure about fleeing enemies. In Earthbound it was easy to do, because fights were pretty static. In Chasm they are not. Plus, I hardly can imagine rats, bats &c suddenly being afraid of a main character.
