personally I only ride the elevators if I really have to, as running around killing things is way more fun than standing on a slow elevator.

I've never actually done it but you do get the ability to go up that elevator shaft later in the game.

The trick is to dash first, and then attack while dashing. It requires precise timing to hit anything with this maneuver, though, and there's no need to even try it with shorter weapons like knives and fists. Actually shorter weapons are better for this. If you grind on armored kobolds then at least you are working towards a claymore as well (and getting decent exp)
